Our Story
Zaca Coffee was founded in 2020 by husband-and-wife team Dennis Patrick and Hayley Firestone, long time residents of California’s Santa Ynez Valley. Driven by a shared passion for quality and community, they set out to bring exceptional coffee to both locals and visitors along the Central Coast—and beyond.
Roasted in small batches in Buellton, Zaca Coffee blends were developed after a full year of tasting and refinement. Green beans are sourced through trusted specialty importers who supply top-grade Arabica from regions including South America and Ethiopia.
Hayley comes from a legacy of craft beverage excellence—growing up in her family’s winery, Firestone Vineyard, and learning firsthand from her brother and brother-in-law, founders of Firestone Walker Brewing Company. Together with Dennis, she now brings that same dedication to quality into the world of coffee.
Zaca’s roasting program is led by Grant Thomas, whose deep experience as a barista and roaster at Stumptown Coffee Roasters brings a refined, modern approach to every batch we roast—ensuring every cup reflects the best of origin, process, and craft.
